Google AI Mode is now recommending UK restaurants. Here's what actually changed.

Google AI Mode began helping people find and book restaurant tables in the UK on 10 April 2026, and most operators still have not been told. If you have wondered why your booking mix has shifted this year, this is one of the reasons.
Here is precisely what it does, what it does not do, and the two decisions it forces on you.

What is Google AI Mode?
Google AI Mode is the conversational mode inside Google Search, where you type a full question in ordinary language instead of keywords and receive a written answer rather than a page of links. In the UK it now handles restaurant queries with what Google calls agentic capabilities.
Google's own example: "find a table for two at a dog-friendly Italian restaurant in Shoreditch for Saturday at 7 p.m." — a request no keyword search could ever have handled.
There is real demand behind this. "Google AI Mode" is searched around 27,100 times a month in the UK (DataForSEO, July 2026), and "AI overviews" another 12,100. People are actively trying to understand this.
Does Google AI Mode book the table directly?
No — and this is where you will hear a lot of nonsense. In the UK, AI Mode presents what Google describes as "a curated list to choose from, with direct links so you can finalise your booking through partners." The diner leaves AI Mode and completes the reservation on the partner platform.
That distinction matters commercially. Google is not taking your booking. Google is deciding which restaurants make the shortlist, and then handing the diner to whichever platform you use.
Being on the shortlist is now the whole game.
Which booking platforms does Google AI Mode work with?
Google named eight UK booking partners in the announcement:

Two things to take from that list.
If your booking system is on it, the path from a Google AI Mode answer to a confirmed table on your books already exists. If your system is not on it — or if you take bookings only by phone, only by email, or through a form on your website — then a diner who finds you in AI Mode has no direct route to booking you, while the restaurant listed underneath you does.
What should a restaurant do about Google AI Mode?
If your booking system is one of the eight
The plumbing is already there, so the work is making sure you survive the shortlist. That means the details AI reads about you being accurate and consistent — opening hours, cuisine, location, price band, and the attributes filtered queries depend on.
Remember Google's own example filtered on dog-friendly. If that attribute is missing or wrong across your listings, you are removed from consideration before your booking system is ever relevant.
If your booking system is not on the list
This is now a commercial question rather than a technical one, and it is worth raising with your provider directly — ask them what their plan is. In the meantime, everything below still applies, and it matters more, not less.
Four things, in order of how much they matter:
Check whether your booking platform is one of the eight. If it isn't, that conversation with your provider is the first job.
Make sure the details AI reads are correct and consistent. Hours, cuisine, location, and whether you take dogs. Wrong or missing attributes filter you out before the shortlist is drawn.
Get covered by the guides AI reads. In our own study of 32 London queries, 90% of citations went to third-party guides — Time Out and Michelin alone accounted for 56%.
Have something answer the phone. AI Mode still sends plenty of people to a phone number, and a call at seven on a Friday that nobody picks up is a table lost to whoever is listed beneath you.
Is Google AI Mode a big change, or vendor hype?
It is a real change, and worth being measured about it.
What is genuinely new: a mainstream, default-on part of Google Search now shortlists restaurants conversationally in the UK and hands off to named booking partners. That is a distribution channel that did not exist in Britain before 10 April 2026.
What is not yet known: how many diners actually use it, and what share of bookings it drives. Google has not published usage figures and we have not seen credible independent data. Anyone quoting you a percentage of bookings from AI Mode is guessing.
What we can measure is the demand behind the behaviour. In the UK, "where to eat in London" now draws roughly 33,765 AI assistant queries a month against 2,400 Google searches for the same phrase (DataForSEO AI Optimization data, July 2026 — modelled estimates, not measured counts). Conversational restaurant questions have already moved. AI Mode is Google catching up with where its own users went.

Questions restaurants ask us
Is Google AI Mode the same as AI Overviews?
No. AI Overviews are the AI-written summaries that appear above normal search results. AI Mode is a separate conversational mode you enter deliberately, where you can hold a back-and-forth. Restaurant booking capability launched in AI Mode.
Do I need to do anything technical to appear in Google AI Mode?
There is no sign-up. Google draws on the same sources it already indexes: your listings, your website, your social media and blogs; Google Business Profile , online reviews, third-party guides and your booking platform. What you control is whether those sources are accurate, consistent and detailed enough to survive a filtered query.
My restaurant is not in London. Does Google AI Mode still apply?
Yes. The rollout is UK-wide. Our study is London-specific because that is where we work, but the mechanism is national.
Will Google AI Mode replace normal Google search for restaurants?
There is no evidence of that and we would not claim it. What has changed is that a second route now exists alongside the first, and it shortlists far more aggressively: three or four names rather than a page of ten.
